Squeeze half a lemon in a small bowl. The lemon should make 1 tablespoon or 15 ml of juice. If not you can just add or reduce the lemon juice.
Then take a cup of soy milk or any unsweetened plant-based milk in a measuring cup. Pour the lemon juice into the cup.
Mix the milk and lemon juice until you are satisfied that these two are combined well. Let the mixture sit for 10 minutes.
